Chettinad Chicken Fry

Serves: 3

Ingredients:

Onion (chopped) – 1 cup
Tomato (chopped) – 1
Ginger garlic paste – 1 tsp

For Chicken:

Chicken – 1/2 kg
Curd – 1/2 cup
Turmeric powder – 1/2 tsp

For masala:

Garlic cloves – 4
Ginger (chopped) – 1 tsp
Turmeric powder – 1/2 tsp
Chili powder – 1 1/2 tsp
Garam masala – 1 tsp
Coriander powder – 1/2 tsp

Spices & herbs:

Cumin – 1/2 tsp
Cinnamon – 1 piece
Star anise – 2 pieces

Method:

To marinate:

1. Grind garlic, ginger, turmeric, chili, coriander, garam masala powders with some water & make into a paste.
2. Now put chicken in a bowl, add the grinded masala some salt, curd & mix well.
3. Allow it to marinate for an hour. Keep aside.

For dish:

1. Heat oil in a pan, add the herbs given above & let it fry.
2. Add onion to it & saute well.
3. Add tomato after onion turns golden brown & stir well.
4. After tomatoes become tender add marinated chicken to it & mix well.
5. Close the pan using lid for 15 mins.
6. Often stir it with lid until it becomes dry.
7. After the water gets dried, stir it & now Chettinad Chicken Fry is ready.
