Tomato Pulao

Serves: 3

Ingredient:

Rice (uncooked) – 1 cups
Tomato pulp – 1 cup
Green chillies (chopped) – 4
Red chilli powder – 1/2 tsp
Small onions (chopped) – 100 g
Garlic cloves (chopped) – 6
Fresh peas – 40 g
lemon – 1/2
Ghee – 2 tsp
Ginger – garlic paste – 1/2 tsp
Water – 1 cup
Coriander leaves – some
Mint leaves – few
Cashew nut – few
Salt – as needed

Spices:

Cinnamon – 1 small piece
Cloves – 3
Cardomans – 2
Bay Leaf – 1

Method:

For tomato pulp:

1. Grind tomatoes and strain it down. To get tomato pulp.

For rice:

1. In the pan add 1 tsp of ghee & fry the cashew nuts till brown. Keep aside.
2.In the same pan heat oil with ghee & add all the spices & saute.
3. Add garlic paste, chillies & onions. Saute untill onion becomes light brown in colour.
4. Now add cooked peas with tomato pulp, water & allow it to boil.
5. While boiling add salt, 1 tsp of ghee, chilli powder, rice, mint leaves(adds flavour), also squeeze lemon juice and stir well.
6. Reduce the flame and close the pan using lid & cook in pressure for about 10 mins (watch time carefully).
7. After 10 mins open the lid check the rice is cooked well, if not keep in pressure for another 5 mins.
8. Finally add roasted cashews, coriander leaves and stir gently the rice.
9. Tastiest Tomato Pulao is ready to serve.
