Thai Prawn Soup

Serves: 6
Ingredients:

Cooked basmati rice – 1 cup
Unsalted butter – 2 tsp
Prawn (cleaned) – 450 g
Garlic cloves (minced) – 2
Onion (diced) – 1
Red bell pepper (diced) – 1
Freshly grated ginger – 1 tsp
Curry powder – 2 tsp
Unsweetened coconut milk – 2 cups
Vegetable stock – 4 cups
Lime juice – 1 tsp
Fresh cilantro leaves (chopped) – 1 tsp
Ground black pepper to taste
Salt to taste

Method:
1. Melt butter in a large pot over medium heat. Add prawn, salt and pepper to taste.
2. Now cook the prawn by stirring occasionally until pink for about 3 mins & set aside.
3. Add garlic, onion and bell pepper to the pot. Stir occasionally until tender.
4. Stir in ginger until fragrant about 1 min.
5. Add in curry paste until well combined. Gradually mix in coconut milk and vegetable stock.
6. Mix for about 2 mins. Bring to a boil & reduce heat and simmer until slightly thickened.
7. Stir in rice, Prawn, lime juice and cilantro.
8. Now Thai Prawn Soup is ready. Serve immediately.
