Ingredients:
Ghee – 3 tsp
Bay leaf – 2
Cinnamon stick – 2 small
Star anise – 1
Cloves – 5
Cardamom – 4
Pepper – 1/2 tsp
Cumin seeds – 1/2 tsp
Onion (finely chopped) – 1
Ginger – garlic paste – 1 tsp
Beans (chopped) – 5
Carrot (chopped) – 1
Potato – 1
Yogurt – 1 cup
Turmeric – 1/2 tsp
Chilli powder – 1 tsp
Cumin powder – 1/4 tsp
Salt to taste
Coriander leaves (finely chopped) – 6 tsp
Mint leaves (roughly chopped) – 20
Basmati rice (soaked 30 mins) – 1 1/2 cups
Water – 2 cups
Method:
1. In a large cooker heat ghee and saute bay leaf, cinnamon stick, star anise, cloves, cardamom for few mins.
2. Then saute onions and ginger – garlic paste well in low flame.
3. Add in vegetables and saute them until they become tender.
4. Now add curd keep in low flame, also add turmeric, chilli, cumin powder, salt & mix well.
5. Add in coriander leaves, mint leaves & soaked basmati rice.
6. Additionally, ghee, pour water & keep it in low flame for 25 mins.
7. Now Veg biriyani is ready. Serve it with raita.
