Corn oil – 7 tsp
Onion (finely chopped) – 1
Cooked beans (frijoles quantity ) – 1
Freshly grated Parmesan cheese or crumbled cottage cheese
Crisp fried corn tortillas (cut into quaters)
1. Heat 2 tsp of oil in a large heavy frying pan & saute the onion until it becomes soft. Add about 1 cup of frijoles (cooked beans).
2. Add about 1 cup of frijoles (cooked beans). Mash the beans with the back of a wooden spoon or potato masher, adding more beans & melted oil until all ingredients are used up & the beans have formed a heavy paste.
3. Use extra oil if necessary. Tip out on to a warmed platter, piling the mixture up in a roll. Garnish with the cheese.
4. Spike with the toetialla triangles & serve it hot.
