Small courgettes – 500 g
Olive oil – 1 1/2 tsp
Lemon – 1
Flaky sea salt & black pepper as needed to sprinkle
1. Trim, rinse the courgettes & slice them thinly.
2. Heat oil in a pan, then add the courgettes & fry, stirring them frequently until they are tender.
3. Wash any wax off the lemon & finely grate the rind.
4. As the courgettes is cooked, sprinkle the lemon rind & season with flaky sea salt & black pepper.
