Spicy Sichuan Noodles

Ingredient:
Noodles – 350 g
Cooked Chicken (shredded) – 175 g
Roasted cashew nuts – 50 g
Spring onion (chopped) – 4
Coriander (chopped) – 2 tsp
Garlic cloves (chopped) – 2
Smooth peanut butter – 2 tsp
Sweet chilli sauce – 2 tsp
Soya sauce – 1 tsp
Sherry vinegar – 1 tsp
Sesame oil – 1 tsp
Olive oil – 1 tsp
Chicken stock (or) water – 2 tsp
Sichuan peppercorns (grounded) – 10

Method:
1. Cook the noodles in a pan of boiling water until it becomes tender. Drain & rinse in cold water.
2. Now combine chopped spring onions, coriander, garlic cloves, smooth peanut butter, chilli sauce, soya sauce, vinegar, sesame oil, olive oil, chicken stock & sichuan peppercorns in a bowl & whisk together.
3. Then ad noodles, shredded chicken & cashew nuts to the dressing & toss gently.
4. Now Spicy sichuan noodles is ready. Serve immediately.
