Sweet & Sour Pork

Serves: 4-5

Ingredients:

lean pork – 350 g
Salt & ground sichuan peppercorns – 1/2 tsp
Chinese rice wine – 1 tsp
bamboo shoots – 115 g
Plain flour – 2 tsp
Egg (lightly beaten) – 1
Vegetable oil for frying
Vegetable oil – 1 tsp
Garlic cloves (chopped) – 1
Spring onions – 1
Green pepper (diced finely) – 1
Fresh red chilli (seeded & shredded) – 1
Soya sauce – 1 tsp
Light brown sugar – 2 tsp
Rice vineger – 3 tsp
Tomato puree – 1 tsp

Method:

1. Cut lean pork into small cube size pieces. Marinate with salt, ground peppercorns & chinese wine for 20 mins.
2. Cut the bamboo shoots into small cube size as pork.
3. Dust the pork with flour, dip in beaten egg & coat with flour. Deep fry in oil for 4 mins & remove from heat.
4. Then reheat the oil, add pork & bamboo shoots & fry once again until it turns golden.
5. Heat 1 tsp of oil & add garlic, spring onion, pepper, chilli and fry for few seconds.
6. Then add the seasoning with stock. Bring to boil & add pork and bamboo shoots & heat through.
7. Here sweet & sour pork is ready, serve it hot.
